On Non-Muslims:

And surely We have honored all the children of Adam

One day during his caliphate, Imam Ali was walking in the village when he saw an old man begging.  He asked who this man was, and his companions replied: O Commander of the Faithful, He is a Christian who has become old and frail, and now begs.  Imam Ali replied: You have not been just to this man: you benefited from him when he was young, and now that he is old and frail you have left him!  Give him an allowance from the Public Treasury

And you will certainly find the nearest in love to those who believe to be those who say: We are Christians; this is because there are priests and monks among them and because they are not proud.

On Animal Rights:

The Arabs at the time of the Prophet Muhammad had a number of barbaric methods of killing their livestock, including strangling them to death, throwing them from a height, and getting them to fight each other until one died.  Prophet Muhammad outlawed these barbaric practices, and the Sharia required Muslims to slaughter animals with one clean and quick cut, and do this whilst reciting God's Holy name.  This is the Halal method of slaughter: a method that seeks to minimise suffering and treat the animal with utmost respect.

Forbidden for you for food are carrion and blood and swineflesh, and that which hath been dedicated unto any other than Allah, and the strangled, and the dead through beating, and the dead through falling from a height, and that which hath been killed by (the goring of) horns, and the devoured of wild beasts
~The Qur'an Ch5, v3

Whoever kills sparrow bird without good reason, God will hold him to account for this on the Day of Judgement
~Prophet Muhammad

In a famous story, Prophet Muhammad cut the sleeve of his robe, rather than disturb a cat that was sleeping on it.  He told the story of a woman being sent to Hell as a consequence of mistreating her cat by locking it up until it died, and contrasted this with the case of a woman who had lead a sinful life, but was rewarded Heaven for feeding a thirsty dog in the desert before quenching her own thirst
